You just have to try the speciality traditional Khmer dish of ‘Amok’ when visiting Cambodia. There are lots of different varieties, but my favourite was the one made with steamed catfish - it's cooked in a rich coconut sauce then wrapped with banana leaves and baked - delicious!

The temples of Angkor are the highlight of any holiday to Cambodia, but allow time to visit the rest of the country and you will be rewarded for your efforts. Take advantage of the improved road network to discover sleepy towns, gems of colonial architecture, abandoned hill stations, lesser visited Angkorian temples and a largely undeveloped coastline.

Take a tour of Cambodia and be astounded by temples in the Angkor complex, their sheer grandeur, exquisite carvings and the way they appear to rise up from the jungle. For pure adventure make your way across country to the disputed temple of Preah Vihear, perched high in the Dangrak Mountains.

You can't fail to be impressed by the gleaming Royal Palace in Phnom Penh and the solid silver floor of the Silver Pagoda. Take in sobering Tuol Sleng Genocide Museum and the killing fields. Roam lesser visited Angkorian temples and faded colonial architecture in Battambang; stop at the charming riverine town of Kampot and explore the abandoned hill station at Bokor. Travel north to look for freshwater dolphins at Kratie, hill tribes and gem mines in Rattanakiri and ride an elephant in Mondulkiri. Travel in Cambodia can be tough so spend a few days on the beach at Sihanoukville.
