The small city of Nablus set in a valley and stretching up the two hills has a labyrinthine Ottoman old city in which merchants sell their wares. The city is known for its soap making, traditionally made from olive oil and flavoured with herbs as well as being the home of knafeh, a cheesy, syrupy dessert and well worth trying in the old city. Atop one of the hills is a colony of Samaritans, one of two left ion the region. The city was the home of the second intifada and murals in the old city pay respect to those who lost their lives on the Palestinian side.
